Savoury Pota Kaleji: A North Indian Street Food Delight

On a recent afternoon in Ranchi, surrounded by the hum of bustling streets and the enticing aroma of sizzling snacks, Judhajit and I visited a popular streetfood vendor renowned for their delectable Pota Kaleji.

Renowned for its rich, earthy flavours, Pota Kaleji is crafted with a robust blend of spices such as cumin, coriander, turmeric, and red chilli. Slow cooking enhances the tenderness of the meat while infusing it with aromatic goodness, making it not just a culinary treat but also a nutritious source of protein and iron.

This version is all about the high-heat magic of a steel wok over a roaring flame. The star ingredients—chunks of chicken liver, gizzard and heart—were first deep-fried to golden perfection in bubbling hot oil. This initial frying process locked in their natural juices, giving them a crisp exterior and tender interior.

The vendor tossed a handful of finely chopped onions into the sizzling wok, followed by a vibrant mix of green chilies, ginger-garlic paste, and a medley of spices.
